Veggie-Loaded Taco Boats (A Self-Love Feast on a Leaf!)

Ditch the tortillas and embrace the freshness of romaine lettuce! These vibrant and satisfying taco boats are a fun way to nourish your body with flavor and feel-good ingredients.

Ingredients:

  • Lettuce Base:

  • 2-3 large romaine lettuce hearts, leaves separated and washed

  • Veggie & Protein Fiesta:

  • 1/2 pound ground beef, turkey, or plant-based protein alternative

  • 1 tbsp taco seasoning

  • 1/2 cup chopped onion

  • 1/2 cup chopped bell pepper (any color)

  • 1/2 cup chopped zucchini or shredded carrots

  • 1/2 cup corn (fresh or frozen)

  • Optional: Black beans or lentils for extra protein

  • Toppings & Flavor Boosts:

  • Shredded cheese (cheddar, Mexican blend, etc.)

  • Salsa or pico de gallo

  • Avocado slices or guacamole

  • Chopped cilantro

  • Sour cream or plain Greek Yogurt

  • Lime wedges

Instructions:

  1. Brown & Season: Cook your ground meat (or protein alternative) in a skillet until browned. Drain fat if necessary. Stir in taco seasoning.

  2. Veggie Sizzle: Add onions, bell peppers, zucchini/carrots, and corn to the skillet. Cook until softened, about 5 minutes.

  3. Flavor Fusion: If using black beans or lentils, add those to the skillet now. Season the whole mixture with a little extra taco seasoning and salt if needed.

  4. Build Your Boats: Arrange lettuce leaves on a plate like little boats. Fill generously with the hot meat and veggie mixture.

  5. Top it Off: Let everyone customize! Pile on cheese, salsa, avocado, cilantro, sour cream/yogurt, and a squeeze of lime.
